Using Cooking Briquettes / Charcoal

Here’s a handy instructional video on how to warm up your cooking fuel. This video shows how to start briquettes using a Weber BBQ, but the same method applies to starting briquettes or charcoal in your spit oven. With the spit being a longer oven, it’s best to make 2 or 3 pyramids on the fuel tray. Once the beads are ready for cooking with, spread them out on the tray. Once spread, a depth of 2-3 beads is usually best for cooking in the spit oven.

If you want to speed up the process of heating up your cooking fuel, here’s a handy but unorthodox method! Recommended for sober chefs who wear eye protection only – we do not recommend this unless you really know what you’re doing! (A hair dryer also works well and is less noisy – and safer). Please use eye protection if using this method and beware of stray embers!

Note: The oven shown in this video is not like the ovens we hire out – you’ll only have the beads on one section of the oven tub, on top of the bead grill tray.
